Giga's and Quetzals share spawns. Sounds weird but it seems to be true on my server occasionally we will wipe the 3 quetzals on the map at any one time and low an behold a giga or 2 will spawn. I am not sure if you tame a quetz it will count the same as if you killed it.

If your looking for a giga I suggest looking into the blue obelisk mountain, other mountains and winter biome in general. #1.
