Go to the "Tried and True" recipe section and check out the SF recipe. It's pretty much what you're talking about. It's basically the same principle as described in another recipe found there, UJSSM (Uncle Jesse's Simple Sour Mash). Both are excellent recipes used by many people here. You might have better luck using one of those.

First 5 gallon batch of UJSSM was stripped and added with the 5 gallon 2nd gen wash for a spirit run. First gen was basically just a big batch of feints, in effect. Smelled and tasted quite strongly of really bad tequila. Proofed the middle two jars, #4 and #5, and they're at 150 and 140, respectively. They also smell and taste the best.

I have started my very first UJSSM, with 4kg white sugar, 4kg cracked corn, and filled to 25 litre mark in fermenter. PH of the water was around 5, according to the strip paper, and original gravity at 1.070. It bubbled happily for over a week, before stopping. It is currently at 1.010, and tastes both sweet and vinegar like.
